Baingan Vindaloo

Eggplant Vindaloo is a healthy vegetable curry recipe with eggplants, coconut milk, mustard, vinegar, pine nuts or peanuts and cilantro.
10 Minutes • Serves 3


  • 2 cups of thinly sliced eggplant
  • ½ cup chopped cilantro
  • 2 tablespoons oil
  • 1 cup water
  • 1 Jar Thiru’s Vindaloo Curry

Cooking Method

  1. Saute, diced eggplant in with oil in a pan, in high heat
  2. Once eggplant is half cooked, add the vindaloo curry  
  3. Stir regularly & simmer in medium heat until reduced 
  4. Garnish with cilantro & serve


Substitute diced potatoes, mushrooms instead of potatoes.
