Eggplant Vindaloo is a healthy vegetable curry recipe with eggplants, coconut milk, mustard, vinegar, pine nuts or peanuts and cilantro.

Ingredients
- 2 cups of thinly sliced eggplant
- ½ cup chopped cilantro
- 2 tablespoons oil
- 1 cup water
- 1 Jar Thiru’s Vindaloo Curry
Cooking Method
- Saute, diced eggplant in with oil in a pan, in high heat
- Once eggplant is half cooked, add the vindaloo curry
- Stir regularly & simmer in medium heat until reduced
- Garnish with cilantro & serve
Options
Substitute diced potatoes, mushrooms instead of potatoes.
