The bold flavours come naturally occurring spices & vegetables - we use traditional and modern cooking methods to extract these flavours
For example: Chef Thiru’s signature cooking paste (thenpandi masala) consists of over a dozen spices which are individual slow-roasted, sun-dried or oven baked at different temperatures, before marinated and blending together. This through process ensures the broad range of flavours are deeply infused into the onions cooked in the Curry Madras.
